A Delicious Morning: Christmas Brunch

The Christmas ham is in the refrigerator waiting to be glazed and cooked. The potatoes, yams, turnips and parsnips are piled up in the pantry, ready to be chopped and roasted.  The orange cranberry bread is ready to be baked; the asparagus to be blanched and the Christmas cookies lack nothing but cream and coffee.  Christmas Eve dinner, it seems, is all wrapped up.   


... but what to make for Christmas breakfast that will make the morning special?

The menu had to start with my husband's Candied Bacon (recipe below).  Decadent yet simple, this is possibly the single most requested dish by friends and family.  For additional inspiration, I turned to one of my favorite food blogs - Petit Luxe - and came across this delicious Vegetable Frittata Recipe.  Packed with protein and vegetables, the frittata (essentially a crust-less quiche) feels fancy but requires very little hands on time (a must, when there are presents to be opened!).  Finish the menu with some fresh fruit, warm sweet cinnamon rolls, coffee and juice, and we've got a mouthwatering menu that will be savored all morning long.  And if that juice happens to have some champagne it, well, who am I to argue?





Candied Bacon
You'll need:
1/2 lb thick cut bacon
1/4 c. light brown sugar
Pepper to taste

Directions:
  • Preheat oven to 400 degrees. Line a half sheet pan with foil (trust me, you don't want to chisel the sugar off after!)
  •  Place bacon in single layer across the sheet pan.  
  • Cover with brown sugar.  Sprinkle with black pepper.
  • Bake for 20 minutes.
  • Remove bacon from foil immediately.  Cool for 5 minutes and serve.
