Super Easy (and delicious!) Garlic & Cheddar Biscuits

Midweek, I tend to be pressed for time. Between writing deadlines, classes, and commitments to friends and family, dinner tends to get back-burnered (so to speak) until the last minute.  Often, this is when we trot out the leftovers (which, by the way, is a terrible term.  No wonder everyone thinks they hate them).  As that rarely elicits an enthused reaction from my husband, I've taken to supplementing left overs with something fresh and delicious.

Last night, venison stew from the weekend was supplemented by melt in your mouth, better-than-Red-Lobster, Garlic Cheddar Biscuits.  Below, the easy-peasy, quick and scrumptious recipe:

Cheddar & Garlic Biscuits 

Ingredients: 

2 c. baking mix (Bisquick or Jiffy will do!)
1 c. Extra sharp cheddar cheese (most American made cheese is closer to "cheese product" than the real deal.  Extra sharp at least gets you in the ballpark.)

2/3 c. milk

Topping:  
1/4 c. butter chopped
3/4 tsp. garlic powder
1/8 tsp. dried parsley (or oregano if you prefer)
1/8 tsp. onion salt

Okay, let's do this

1.  Preheat the oven to 450 degrees.
2.  In a mixing bowl, combine baking mix, milk and cheese until soft dough forms (It will be lumpy)
3.  Drop 1-2 Tbsp. of dough onto ungreased cookie sheet, leaving at least 1 inch between biscuits.

4.  Bake 8-10 minutes, or until the biscuits began to brown slightly on the top.




Meanwhile...
1. Melt butter by placing in microwave and heating for 3 ten second intervals, stirring between each.
2.  Stir in parsley, garlic powder and onion salt.

3.  When the biscuits are done, brush butter mixture on top, while still on the baking sheet.


Serve warm.
