Prosciutto Crusted Quiche: The Perfect Valentine's Day Brunch

This year, Valentine's Day falls on a Saturday.  To my mind, that means more options.  Instead of just planning a special evening, I wanted to make the whole day special.  I intend to start the day off right with a romantic Valentine's Day brunch for two.

The menu?  Fresh berries, croissants from a local bakery, marmalade jam, coffee from our favorite coffee roaster, and, the piece de resistance, individual ramekins of Prosciutto Crusted Quiche.

One of my best friends recently introduced me to this super easy, super delicious and impressive looking dish and I thought I'd share so you can try it! Trust me, you'll be so glad you did! 

Prosciutto Crusted Quiche 


Ingredients 

2 Oven-Safe Ramekins (not an ingredient, really, but important in this case!!)

4 Large Eggs
4 Slices of Prosciutto
1-2 Tbsp Milk
2-4 Tbsp Shredded Cheese (I like Manchego or Gruyere, but a sharp Cheddar would do just fine)
2-4 tsp Thyme (or basil, chives, herbes de provence, rosemary, sage... whatever you've got!)
Salt & Pepper
Butter or Cooking Spray 

The Process 

  1. Preheat oven to 375. 
  2. Grease ramekins with butter or cooking spray.
  3. Using 1-2 pieces of prosciutto, line each ramekin leaving a slight overlap at the rim.  
  4. In a separate bowl, whip eggs and milk.  Add in cheese, salt, pepper, and herbs and continue to fold in til integrated. 
  5. Pour egg mixture into ramekins, being careful not to overflow.  
  6. Add a few extra sprinkles of cheese and herbs to the top to create a slight crust (yummm...)
  7. Place ramekins on baking sheet and into preheated oven for 25 minutes, or until the top is slightly brown and the egg doesn't appear runny.  Depending on how full your cups were, they may develop a lovely puff on the top (which is so much fun to break into!)
  8. Allow to cool slightly and serve! 

Variations:
Eggs are one of those dishes that can go with almost ANYTHING.  Depending on what you have on hand, try adding chopped asparagus, sauteed spinach, roasted red peppers or any other delicious leftover!

  1. Looks delicious! We've used our ramekins to quickly microwave an egg to make a breakfast sandwich when we have English muffins lying around. I'll have to try to bake these in them some time!
